Simply Veggie PIZZA - HOMEMADE

I CHERISH Friday Nights! As Friday Nights are Pizza Nights.
I Love Pizza; though my Love for Pizza is a bit partial towards healthy eating!
Let me correct myself.
I Love HEALTHY Pizza.
I Love Local Pizzeria's Pizza.
I Love HOMEMADE Pizza.

Mister J and I have eaten hundreds of pizzas together.
Nopes! Counting is not possible! But we have tried almost every Pizza chain and all the local pizzerias we came across while living in 6 different states of America. 

Not always but many a times, I try my hands on making all organic pizza in my kitchen. 
And whenever the pizza is coming out of my kitchen, it is for sure made from scratch with all organic ingredients, homemade sauce and yes, no yeast!

And this one specially lies in the category of "Eat Better World" 
Simply veggie, Homemade Pizza
The dough is prepared using Wheat Flour, All Purpose Flour, Semolina, Baking Powder, Salt and Skim Milk. 

Pizza Sauce is prepared using very ripe red heirloom Tomatoes, freshly grated Garlic Basil Leaves and fried Green Chilies

Cheese is Fresh Mozzarella from Whole Foods Market 

Toppings are Baby Spinach and Marinated Onions 

Himalayan Salt and Freshly Grounded Black Pepper 
Baking time all included is 30 minutes. 

Classic Heirloom Tomato Sauce with Fresh Basil 

1.5 lbs very ripe red heirloom tomatoes - peeled, seeded and coarsely blended 
1/2 cup extra virgin olive oil
4 large garlic cloves - minced
2-3 Thai green chilies - finely chopped
1/4 cup red wine
1 tablespoon hone or brown sugar
1 small bunch basil - roughly chopped
1 teaspoon Himalayan salt
Freshly ground black pepper

Step 1 - Heat olive in a heavy bottomed saucepan on medium high heat and saute garlic and  for one minute.
Step 2 - Add wine and simmer for 5-6 minutes, until wine has reduced by half. 
Step 3 - Add the tomatoes and bring to boil. As soon as the sauce reaches boiling point, reduce heat to medium-low and simmer uncovered for 30 minutes (Add some water if your heirlooms are not so watery) until the sauce has thickened and oil separates on side. (You have to stir from time to time) Add the basil, honey, salt and pepper. Add warm water if the sauce is too thick. Continue to simmer for 5 minutes. Remove from heat and transfer to a bowl. 

Pizza Dough 

Makes 1 Pizza Medium Size Pizza

1/2 cup all purpose flour
1/2 cup whole wheat flour
1 tablespoon semolina
1 teaspoon baking powder
1/4 teaspoon salt
1 cup skim milk
1/2 cup melted butter

Step 1 - In the bowl of a standing electric mixer fitted with a dough hook, combine the dry ingredients (flours, baking powder, salt). Stir gently to mix.
Step 2 - Turn the mixer on low setting and slowly add the melted butter in one flow.
Step 3 - Add the milk, a little at a time, mixing at the lowest speed until all the flour has been incorporated. When the dough starts to come together, increase the speed to medium. Stop the machine periodically to scrape the dough off the hook. the dough should not be too crumbly or too sticky. Adjust the dough by adding more flour or more milk. Mix until the dough gathers into a smooth ball.
Step 4 - Cover with a damp kitchen towel. Keep aside for at least an hour. 

Baking Pizza with your favorite toppings

Step 1 - Stick a pizza stone or a baking pan in the oven and preheat them to 425 degrees F. (A baking pan can be used to bake pizza. Just turn it over and preheat)
Step 2 - Once the dough has risen and a bit spongy, turn it onto a lightly floured counter. Stretch once again and roll into a 12 inch circle and transfer on to a parchment-lined baking sheet (the baking sheet here is upside down and preheated in oven; Be careful) 
OR, dust a pizza paddle with flour and slide it under the pizza dough. 
Step 3 - Brush the crust with a thin layer of olive oil. Top with the desired amount of heirloom tomato sauce. Top with your favorite toppings. I've used a handful of mozzarella cheese, baby spinach leaves and marinated onions(cut onions into cubes, toss with a teaspoon of curry powder and yogurt. Refrigerate for an hour)
Step 4 - Slide the pizza onto the hot stone in the oven and bake for 15-17 minutes, until the crust is golden brown and crisp. 
Step 5 - Serve with Parmesan cheese, dried oregano and red chili flakes.
