Bird's Nest { Eggs and Toast }

Bird's Nest - My Husband's favorite breakfast.

Prior to 2006, I had never heard of such a thing. The first time I saw this beautiful recipe in a cookbook in Barnes & Noble and the first thought that came into my mind was how the egg got into the bread? Since I was in hurry so could not read the whole recipe but the picture was there fixed in my mind.

And one morning when I was planning to make something different for breakfast, that picture suddenly popped up from some corner of my mind and I was busy searching the proper recipe over internet and then came to know that this dish has many colorful names: egg in a boat, egg in a hole, egg in a frame, egg in a poke, egg in a basket, bird’s nest, toad in a hole and one-eyed jack. I loved the name Bird's Nest the most and presented this very simple yet extraordinary breakfast in front of my Husband with same name- Bird's Nest and since then Bird's Nest became his favorite breakfast.

This dish is usually made by cutting a circle or other shape out of a slice of bread, often using a drinking glass or a cookie cutter. The thicker the bread, the smaller the hole needs to be. The bread is fried until brown on one side and then flipped and an egg is broken into the center and seasoned, usually with salt and pepper, and sometimes with other herbs.{ Although, I always prefer to crack the egg in a separate bowl to prevent my yolk from breaking, and then carefully pour the egg into the cut-out hole in the bread. Also, I save a little egg white to dip the cutout center for making a small round French toast.} The egg is cooked on low flame until the yolk is light runny, the white solidifies and the bread is just brown from bottom too. You can even carefully flip the bread over as soon the white sets, and cook it to your liking. Or, you can pop the whole pan under the broiler for a minute or two

The cutout center of the bread is then fried with left over white as a round French toast and served alongside or on top of the finished egg. 

Here is my method of cooking this simple yet extraordinary breakfast:

  • 1 egg
  • 1 slice of bread (The thicker the bread, the smaller the hole needs to be)
  • 1 tablespoon butter
  • Crack the egg into a bowl and set the bowl aside.
  • Use a 3-inch cookie cutter (circle, heart, star, or flower) to cut a shape out of the piece of bread.
  • Melt the butter in a frying pan over medium heat. Place the bread in the pan and fry it lightly on one side. Flip the bread over. Reduce the heat to low.
  • Carefully pour the egg into the cut-out hole in the middle of the bread {save 1 tablespoon egg white for dipping the cut-out center) and cook for 2-3 minutes on low flame until the yolk is light runny, the white solidifies and the bread is just brown from bottom too or I should say until the egg has set in the bread "nest." For an over-easy egg, flip the egg and bread and cook it on the other side. 
  • Place the cutout center in the left-over egg white, letting the round slice soak up the egg  on both the sides, as we do while making French toast. Transfer it to the same pan and brown on both the sides.
  • This step can be done along on the side of the pan while making the Bird's Nest.
