Looking for something refreshing and filling for a warm summer evening...Mango Salsa can be the best choice..
I know, I have never imagined of making my own salsa, as vast varieties of SALSAS are available in many stores nearby...the best one according to me were at Trader Joe's, Sams Club and Whole Food Market. So many options, more than lovely tastes...
My husband requires nothing if a spicy, tangy store bought salsa and a bag of taco chips is there in front of him.
I cook, I bake, I prepare so many different recipes from cookbooks, web-books and many times, my own MIND book :), while preparing anything special, something different from normal daily routine food, I always hope it will be something my husband, CHIEF TASTE -TESTER here, will enjoy. I live for his "Marks out of 100" or "KILLER ONE” comments and bask in his compliments. Seeing his so much of love towards SALSAS, I thought to give this recipe of "MANGO SALSA" a try.
Well, how this recipe would work out, even I was not sure. Mixing the king of Fruits "Mango" with savory flavors like bell peppers, onions, tomatoes, jalapeno and cilantro was intriguing to me. (!!!!).
The two ripe mangoes lying in my refrigerator since last weekend, were shouting and saying...give it a try girl...and I listened to them. But hell yeah! Was I glad??????? You bet I was.
This wonderful, refreshing, fresh fruit salsa was seriously unparalleled. The crunch of onions and bell peppers, the savory taste of plum tomato, a bit of heat from the jalapeno and the mild taste of fresh herbs went so well with chunky ripe mangoes. My Chief Tester loved it too...
Summer evenings, while doing barbecues or grilling salmon, or just sitting idle in the balcony...this fresh fresh fruit Mango Salsa can be your flavorful healthy companion. A must try dish.

Ingredients:
- 2 medium ripe yet firm Mangoes - peeled, seeded and diced
- 1 small Red Onion, finely chopped
- 1 small Green Bell Pepper, diced into small pieces
- 1/2 Red Bell Pepper, diced into small pieces
- 2 Jalapeno Peppers, seeded and finely chopped
- 1 small fresh Tomato, finely chopped
- A pinch of Cinnamon powder
- Juice of 1 Lemon
- Several Mint and Cilantro leaves, torn into small pieces
- A dash of Salt and Black Pepper
Place all the ingredients in a medium bowl and toss with fork to mix. Cover with a plastic wrap, and allow to sit at least 30 minutes in the refrigerator before serving.
