Vegetables RAVA PIZZA { Semolina Pancakes with Veggies }

This is again completely my innovation. 
I am saying the statement, as I innovated this in my kitchen without taking any help from anyone or any website, while trying to make Uttapam / Khaman Dhokla and never got the perfection :( 
This recipe is a kind of a raised Uttapam made with Vegetables, Rava, Yogurt or Buttermilk and Baking powder.....more of a RAVA PIZZA, which can easily BE cut into pieces like we do for Pizza...
This RAVA PIZZA is a kind of shallow fried pancake, mainly cooked in steam.
Whenever I feels like having a heavy breakfast, without making too many efforts, this is my ideal choice. Tastes awesome when made with Buttermilk and served with green chutney or tomato ketchup. 
The picture below is not of the best RAVA PIZZA, I have made as, the Baking Powder I used was resting in my pantry since last few months... 


  • 1 cup Rava/  Sooji / Semolina
  • 3/4 cup Buttermilk or 1/2 cup Plain Yogurt mix with 1/2 cup Water
  • 1 Large Onion - very finely sliced
  • 1 small size Tomato, finely chopped ( I used cherry tomatoes as I had a few left in my refrigerator)
  • 2-3 Green chili (optional)
  • 1/4 Cabbage, very finely sliced
  • 1/4 teaspoon Baking Powder
  • 1/2 teaspoon Red chili powder (optional)
  • 1/2 teaspoon Cumin Seeds
  • Salt - as per taste
  • A fistful of Coriander leaves, finely chopped
  • Extra Virgin Olive Oil (EVOO)- for making the Uttapam

  1. In a large bowl, mix together Rava and Buttermilk/Yogurt and form a batter of medium-thick consistency. Add a little water, if required, to get the proper consistency. It should not be in the flowing condition.  
  2. Add Salt and Baking powder and mix well. Cover the bowl and let stand for 10 -15 minutes, in the meanwhile you can chop up the vegetables - Onions, Tomatoes, Cabbage, Green Chilis
  3. After 15 minutes, the Rava would have soaked up the water and the batter would have become thick and fluffy. Now add the finely chopped vegetables, Chili powder and mix the batter once more. 
  4. Add EVOO on a preheated non-stick frying pan. Add a few Cumin seeds and stir them around for a few seconds and then pour 2 ladlefuls of the batter on the pan, one over the another, maintaining the round shape.  Cover the pan tightly, so the steam is intact within the pan, and let it cook for a couple of minutes till the bottom side is golden brown in color and the upper part becomes firm. Then flip carefully over to the other side and cook till golden brown.
  5. The middle portion will be raised and the corners will be crispy.
  6. When both the sides are well cooked, remove it from heat and cut with a pizza cutting wheel or a sharp knife into four pieces and serve hot with green chutney or tomato ketchup.
  7. A great preparation for Lunch Box and Picnics.
