Shell Pasta with Broccoli

This is another quick, easy, delicious weeknight dish ! Minimum ingredients & spicy flavour really goes well with healthy Broccoli. Broccoli is very low in Saturated Fat and Cholesterol. It is also a good source of Protein, Vitamin E, Calcium, Iron, & Magnesium and a very good source of Dietry Fiber. It also contains multiple nutrients with potent anti-cancer properties. Here i am making use of Chili flakes to spice up bland broccoli.

  • 1 bunch Broccoli
  • 4 onces thinly sliced Carrots
  • 4 cups small Shell Pasta
  • 2 tablespoons Extra Virgin Olive Oil
  • 8 cloves Garlic, sliced very thin
  • Chicken Meatballs, cooked & cut into halves {Optional}
  • 1 teaspoon Red Chili flakes
  • 1/4 teaspoon Salt
  • 1/4 cup grated Parmesan Cheese
  • Tomato Salsa (for serving)

  1. Cut Broccoli into small florets & chop stems.
  2. Cook in a large pot of boiling salted water until tender-crisp, about 2 minutes.
  3. Transfer to a bowl of ice water using a slotted spoon.
  4. Drain& set aside.
  5. Cook pasta in the same pot of boiling water until tender but firm, about 8 to 10 minutes.
  6. Reserving 1/2 cup of the liquid, drain& return to the pot.
  7. Heat oil in a medium non-stick skillet over medium heat; add garlic and fry until light brown.
  8. Add carrots, meatballs and broccoli to skillet and cook for about 2 minutes. Add a very little salt.
  9. Add to pasta along with the Red Chili flakes. Add the required amount of reserved cooking liquid & toss to coat.
  10. Sprinkle Parmesan on each serving.
  11. Serve with spicy tomato salsa.
