Parantha's Cousin "Potato Pancake" or "Bengali Gola Ruti"

These make a delicious weekend breakfast, a light lunch, a beautiful evening snack or even a Sunday-night supper. 
For me, the idea of making a 'Potato Pancake' originated from Dunkin'-Donuts signature crunchy Hash Browns
With these crispy fried hash-browns and a hot coffee, I somehow get the feeling of having ' Kulhar' Tea with hot n spicy Pakoras on a roadside tea stall, back in India.  
This Pancake or I should say " Aloo Parantha" or more of a " Gola Roti " in Bengali, is prepared using raw grated Potatoes, green chilis, eggs and milk. I have added rice flour for the crispy texture.

Ingredients :
  • 1/2 cup All Purpose Flour
  • 1 tablespoon Rice Flour
  • 1/2 cup Milk
  • 3 eggs
  • 2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 package (20 ounces) Potatoes
  • 1 cup chopped Green Onions, finely chopped (Optional)
  • Extra Virgin Olive Oil


  1. Peel and grate potatoes. Wash thoroughly in cold water.
  2. In large bowl, thoroughly whisk flour, milk, eggs, salt and pepper.
  3. Add potatoes and onions, mix well.
  4. Heat 1 tsp oil in a skillet or griddle. Pour 1/3 cup potato mixture and flatten with the back of a spoon. Fry 4-5 minutes on each side, or until golden brown. Drain on paper towels and serve hot with any kind of sauce.

I always used to make sambar, chutney, dosa, idli, vada, poori..... Gradually started making north indian items also. Now I prepare rajma, chole, paneer sabzi... Once in some mela, I had ker sangri sabzi. Since then I am hunting for that. I was going through many recipes for ker sangri sabzi. But could not find ker sangri in delhi, where I stay. I am really hunting for that and waiting to make ker sangri sabzi. Thank you so much for so much information...
